Ingredients:
• 1½ pounds (24 oz) chicken tenders, pounded thinly
 • 2 bags Crisp Power Protein Pretzels, Everything Flavor 
• 2 tablespoons tapioca starch (or flour or g-free flour)
• 1 large egg
• Olive oil cooking spray

Method:

  1. Preheat the oven to 425°F.
    Crush the Crisp Power chips and tapioca starch into fine crumbs using a food processor.
  2. Beat the egg in a bowl.
  3. Place the crumb mixture into a shallow dish.
  4. Dip each chicken tender into the egg, then coat thoroughly with the pretzel-crumb mixture.
  5. Arrange coated tenders on a silicone mat or parchment-lined baking sheet sprayed with olive oil spray.
  6. Lightly spray the tops of the tenders with more olive oil spray.
  7. Bake for 12 minutes or until golden and fully cooked through.
  8. Air fryer option: Cook in batches at 400°F for 7–8 minutes, or until crispy and cooked through.
  9. Serve with a low carb BBQ sauce or honey mustard.
