Ingredients:
• 1½ pounds (24 oz) chicken tenders, pounded thinly
• 2 bags Crisp Power Protein Pretzels, Everything Flavor
• 2 tablespoons tapioca starch (or flour or g-free flour)
• 1 large egg
• Olive oil cooking spray
Method:
- Preheat the oven to 425°F.
Crush the Crisp Power chips and tapioca starch into fine crumbs using a food processor. - Beat the egg in a bowl.
- Place the crumb mixture into a shallow dish.
- Dip each chicken tender into the egg, then coat thoroughly with the pretzel-crumb mixture.
- Arrange coated tenders on a silicone mat or parchment-lined baking sheet sprayed with olive oil spray.
- Lightly spray the tops of the tenders with more olive oil spray.
- Bake for 12 minutes or until golden and fully cooked through.
- Air fryer option: Cook in batches at 400°F for 7–8 minutes, or until crispy and cooked through.
- Serve with a low carb BBQ sauce or honey mustard.
