Ingredients (serves 9)
Pretzel Base
- 1 7 oz bag of Sea Salt Crisp Power Protein Pretzels (sold in select grocery stores) or 3 1.75 oz bags Sea Salt Crisp Power Protein Pretzels
- 3 tbsp of of melted coconut oil
- 1 whole egg
- 1/4 cup of granulated monk fruit
Cheesecake Layer
- 1 cup of cottage cheese
- 1 tbsp of vanilla sugar-free pudding
- 1/2 cup of peanut butter powder
- 4 oz cup of cream cheese
- 1 whole organic egg
- 2 tsp of vanilla extract
- 1/3 cup of granulated monk fruit
Topping
- Sea Salt Crisp Power Protein Pretzels
- 10 pieces of sugar-free caramel
- 2 tbsp of whole milk
- 1/3 cup of crushed peanuts
- 1/3 cup of Lily’s peanut butter chocolate chips
Instructions
- Preheat the oven to 350F.
- Process or blend the ingredients for the crush and press in a pie dish.
- Bake the crust for 10 minutes. Let it cool down.
- Blend the ingredients for the cheesecake filling and pour over base.
- Bake for 30-35 minutes.
- Microwave the caramels with milk and mix well, top the cheesecake with crumbled Protein Pretzels, caramel, peanuts and peanut butter chocolate chips.
- Slice into 6-8 pieces and enjoy!
