Crisp Power Strawberry Protein Pretzel Salad

Ingredients (serves 8)

Pretzel Layer

Cheesecake Layer

  • 1 cup of cream cheese (room temperature)
  • 1/2 cup of whole milk greek yogurt
  • 1 tsp of vanilla extract
  • 2 tbsp of beef gelatin
  • 2/3 cup of water

Topping

  • 1 cup of sliced strawberries

Instructions

  1. Crush the pretzels into fine pieces. Add in the coconut oil and vanilla extract.
  2. Transfer the pretzel base into a silicone loaf dish and refrigerate for a couple of minutes.
  3. Sprinkle the beef gelatin over the water and let it bloom for 5-10 minutes.
  4. In a large bowl mix the cream cheese with greek yogurt, vanilla extract and granulated monk fruit.
  5. Add the beef gelatin into the cheesecake mix and blend well.
  6. Top the pretzel layer with cheesecake layer, top with sliced strawberries and refrigerate for at least 2 hours.
  7. Slice into 8-10 pieces and enjoy!
