Strawberry Protein Pretzel Salad…but make it low sugar, crunchy, creamy, and absolutely irresistible.

Ingredients (serves 8)
Pretzel Layer
- 2 packs of Sea Salt Crisp Power Protein Pretzels
- 1/2 cup of melted coconut oil
- 1 tsp of vanilla extract
Cheesecake Layer
- 1 cup of cream cheese (room temperature)
- 1/2 cup of whole milk greek yogurt
- 1 tsp of vanilla extract
- 2 tbsp of beef gelatin
- 2/3 cup of water
Topping
- 1 cup of sliced strawberries
Instructions
- Crush the pretzels into fine pieces. Add in the coconut oil and vanilla extract.
- Transfer the pretzel base into a silicone loaf dish and refrigerate for a couple of minutes.
- Sprinkle the beef gelatin over the water and let it bloom for 5-10 minutes.
- In a large bowl mix the cream cheese with greek yogurt, vanilla extract and granulated monk fruit.
- Add the beef gelatin into the cheesecake mix and blend well.
- Top the pretzel layer with cheesecake layer, top with sliced strawberries and refrigerate for at least 2 hours.
- Slice into 8-10 pieces and enjoy!
