S’mores Protein Cookie Bars

Get ready for a taste explosion with these S'mores Protein Cookie Bars!

Ingredients (Makes 9 bars)

Cookies base

  • 1 1/2 cups of low carb flour
  • 2 scoops of vanilla protein powder
  • 1/2 tsp of sea salt
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 1/4 cup of brown granulated monk fruit
  • 1/2 cup of granulated monk fruit
  • 1 tbsp of vanilla extract
  • 3/4 cup of nut butter
  • 2 whole eggs
  • 2 tbsp of unsweetened almond milk
  • 1/4 cup of sugar-free chocolate chips

Marshmallow Protein Pretzel Topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine all dry ingredients.
  3. Mix in the nut butter, eggs, vanilla extract, and almond milk until smooth. Mix in chocolate chips.
  4. Press the dough 3/4 part of the dough into a 8x8 baking dish.
  5. Add a layer of melted chocolate, add a layer of Sea Salt Crisp Power Protein Pretzels followed by another layer of marshmallows, top with leftover cookie dough.
  6. Bake for 22-24 minutes (you can add foil paper to avoid marshmallows from burning).
  7. Take out from the oven and top with some more marshmallow and chocolate chips, let them melt. Let it cool down completely before slicing into 9 pieces.
