S’mores Protein Cookie Bars

Get ready for a taste explosion with these S'mores Protein Cookie Bars!

Ingredients (Makes 9 bars)
Cookies base
- 1 1/2 cups of low carb flour
- 2 scoops of vanilla protein powder
- 1/2 tsp of sea salt
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1/4 cup of brown granulated monk fruit
- 1/2 cup of granulated monk fruit
- 1 tbsp of vanilla extract
- 3/4 cup of nut butter
- 2 whole eggs
- 2 tbsp of unsweetened almond milk
- 1/4 cup of sugar-free chocolate chips
Marshmallow Protein Pretzel Topping
- 1 7 oz bag of Sea Salt Crisp Power Protein Pretzels
- 1/4 cup of sugar-free chocolate chips (melted)
- 2 cups of sugar-free marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine all dry ingredients.
- Mix in the nut butter, eggs, vanilla extract, and almond milk until smooth. Mix in chocolate chips.
- Press the dough 3/4 part of the dough into a 8x8 baking dish.
- Add a layer of melted chocolate, add a layer of Sea Salt Crisp Power Protein Pretzels followed by another layer of marshmallows, top with leftover cookie dough.
- Bake for 22-24 minutes (you can add foil paper to avoid marshmallows from burning).
- Take out from the oven and top with some more marshmallow and chocolate chips, let them melt. Let it cool down completely before slicing into 9 pieces.
