Ingredients
Brownie Layer
- 1 bag Lakanto sugar-free brownie mix
- 2 eggs
- ¼ cup coconut oil

¼ cup brewed coffee

¼ cup sugar-free hot fudge
Peanut Butter Pretzel Layer

½ cup natural peanut butter, melted

1 bag Sea Salt Crisp Power Protein Pretzels
Caramel Nut Layer

15 Choc Zero caramels (~120g)

2 tablespoons milk or almond milk

¼ cup chopped roasted peanuts
Chocolate Drizzle

¾ cup sugar-free chocolate chips (Lily’s or Choc Zero)

½ teaspoon coconut oil
Instructions

Line a loaf pan with parchment and lightly spray with cooking spray.

Prepare brownie mix using 2 eggs, coconut oil, coffee and sugar-free hot fudge. Pour into the prepared pan and bake for 23-25 minutes (underbake a touch if you like them gooey). Let cool completely.

Melt peanut butter in the microwave for 20 seconds, until just pourable. Spread evenly over cooled brownies. Press pretzels on top in rows. Chill until firm (about 20 minutes).

In a microwave-safe bowl, melt Choc Zero caramels with milk in a small pot until melted. Let cool slightly, then pour over the pretzel layer. Sprinkle peanuts on top and refrigerate until caramel is set (about 30 minutes).

Melt chocolate chips and coconut oil together until smooth. Spread over caramel layer. Chill until fully set — about 1 hour.
- Lift from the pan, slice into 10 bars, and store in the fridge.
