Loaded Protein Breakfast Nachos

Calling all breakfast lovers! This Mexican comfort food is bursting with flavor and packed with protein, making it a fantastic low-carb alternative.

Ingredients (serves 2)
- 1 1/2 cup of shredded cheddar cheese
- 1 tbsp of chipotle purée
- 1/2 cup of cottage cheese
- 1 bag of of Sea Salt Crisp Power Protein Pretzels
- 5 eggs, divided
- 3 slices of bacon
- 3/4 cup of chunky salsa
- 1/4 cup of chopped cilantro
- 1 sliced jalapeño
Instructions
- Blend the ingredients for the cheese (cheddar, chipotle, cottage cheese) and microwave for 1 minute, stir well until fully blended.
- In a greased skillet, scramble 3 of the eggs and bacon. Chop the bacon. Cook the remaining 2 eggs, sunny side up.
- Spread the Protein Pretzels in a dish and top with a layer of cheese followed by scrambled eggs, chopped bacon and another layer of cheese. Add the fried eggs, salsa, cilantro and jalapeños on top. Enjoy!
