Ingredients (serves 9)
Pretzel Layer
- 2 packs of Cinnamon Crunch Crisp Power Protein Pretzels
- 1/4 cup of finely ground pecans
- 1/2 cup of melted coconut oil
Cheesecake Layer
- 1 cup of cream cheese (room temperature)
- 1/2 cup of cottage cheese
- 1 tsp of cinnamon
- 1 tsp of vanilla extract
- 1/3 cup of granulated monk fruit
- 2 whole eggs
Topping
- 6 pieces of sugar-free caramels
- 1 tbsp of whole milk
- 1/3 cup of crushed pecans
- 1/4 cup of melted sugar-free chocolate
- 1/4 cup of crushed Cinnamon Crunch Crisp Power Protein Pretzels
Instructions
- Preheat the oven to 350F.
- Crush the pretzels into fine pieces. Add in the coconut oil and vanilla extract.
- Transfer the pretzel base into a silicone loaf dish and bake for 10 minutes.
- Blend all the ingredients for the cheesecake.
- Add the beef gelatin into the cheesecake mix and blend well.
- Top the pretzel layer with cheesecake layer, top with sliced strawberries and bake for 35 minutes.
- Let it cool down. Melt the caramels with milk in the microwave for 30 seconds. Pour the caramel over the cheesecake, drizzle melted chocolate and sprinkle pecans and crushed pretzels.
- Slice into 9 pieces and enjoy!
