Chicken Cheddar Chive Salad

Inspired by the viral Costco Rotisserie Chicken Salad, this is perfect for busy days when you need a quick yet satisfying meal. 

Ingredients (serves 4)

Chicken

  • 1 whole Costco Rotisserie chicken
  • 1 tsp garlic powder
  • 1 tbsp of coconut aminos
  • 4 tbsp of dried onion flakes
  • 1 cup of chopped lettuce
  • 4 tbsp of chopped chives
  • 1/4 bag 13 oz Cheddar Crisp Powder Cheddar Protein Pretzels (sold at Costco!), or 2 bags 1.75 oz Cheddar Crisp Power Protein Pretzels
  • 2/3 cup of plain greek yogurt

Garnish

  • Red Pepper Flakes

Instructions

  1. Remove the skin and bones from the rotisserie chicken, saving the bones for broth. Shred the chicken and place it in a bowl along with the retained juices.
  2. Add garlic powder, coconut aminos, onion powder, chopped lettuce, chives, and Greek yogurt to the bowl. Mix well to combine.
  3. Crush the Cheddar Crisp Power Protein Pretzels and fold them into the salad. Garnish with red pepper flakes.
  4. Serve chilled and enjoy your flavorful salad!
