Chicken Cheddar Chive Salad

Inspired by the viral Costco Rotisserie Chicken Salad, this is perfect for busy days when you need a quick yet satisfying meal.

Ingredients (serves 4)
Chicken
- 1 whole Costco Rotisserie chicken
- 1 tsp garlic powder
- 1 tbsp of coconut aminos
- 4 tbsp of dried onion flakes
- 1 cup of chopped lettuce
- 4 tbsp of chopped chives
- 1/4 bag 13 oz Cheddar Crisp Powder Cheddar Protein Pretzels (sold at Costco!), or 2 bags 1.75 oz Cheddar Crisp Power Protein Pretzels
- 2/3 cup of plain greek yogurt
Garnish
- Red Pepper Flakes
Instructions
- Remove the skin and bones from the rotisserie chicken, saving the bones for broth. Shred the chicken and place it in a bowl along with the retained juices.
- Add garlic powder, coconut aminos, onion powder, chopped lettuce, chives, and Greek yogurt to the bowl. Mix well to combine.
- Crush the Cheddar Crisp Power Protein Pretzels and fold them into the salad. Garnish with red pepper flakes.
- Serve chilled and enjoy your flavorful salad!
