Cheddar Mac & Cheese Cups

Creamy on the inside, crispy on top, and packed with cheesy flavor, these Cheddar Mac & Cheese Cups are an easy high-protein twist on a comfort food classic. Finished with crunchy CRISP POWER Cheddar Protein Pretzels, they're perfect for meal prep, parties, or an easy snack.

Ingredients (Makes 9 Cups)

  • 5 oz uncooked protein pasta (elbows or shells)
  • 1 tbsp unsalted butter
  • 1 tbsp cornstarch
  • 1 cup whole milk
  • 3/4 cup shredded sharp cheddar cheese
  • 1 tsp buffalo sauce (optional, for a little kick)
  • 1/2 tsp sea salt
  • 3/4 cup (about 2 oz) CRISP POWER Cheddar Protein Pretzels, crushed

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9-cup muffin pan.
  2. Cook the protein pasta according to the package directions. Drain and set aside.
  3. In a saucepan, melt the butter. Whisk in the cornstarch, then slowly whisk in the milk.
  4. Cook until the sauce begins to thicken, then stir in the cheddar cheese, buffalo sauce, and salt until smooth.
  5. Fold the cooked pasta into the cheese sauce.
  6. Divide the mixture evenly among the muffin cups.
  7. Sprinkle the crushed Cheddar Protein Pretzels evenly over the tops.
  8. Bake for 10–12 minutes, until lightly golden.
  9. Let cool for 5 minutes before removing from the pan.
