Creamy on the inside, crispy on top, and packed with cheesy flavor, these Cheddar Mac & Cheese Cups are an easy high-protein twist on a comfort food classic. Finished with crunchy CRISP POWER Cheddar Protein Pretzels, they're perfect for meal prep, parties, or an easy snack.

Ingredients (Makes 9 Cups)
- 5 oz uncooked protein pasta (elbows or shells)
- 1 tbsp unsalted butter
- 1 tbsp cornstarch
- 1 cup whole milk
- 3/4 cup shredded sharp cheddar cheese
- 1 tsp buffalo sauce (optional, for a little kick)
- 1/2 tsp sea salt
- 3/4 cup (about 2 oz) CRISP POWER Cheddar Protein Pretzels, crushed
Instructions
- Preheat the oven to 375°F and lightly grease a 9-cup muffin pan.
- Cook the protein pasta according to the package directions. Drain and set aside.
- In a saucepan, melt the butter. Whisk in the cornstarch, then slowly whisk in the milk.
- Cook until the sauce begins to thicken, then stir in the cheddar cheese, buffalo sauce, and salt until smooth.
- Fold the cooked pasta into the cheese sauce.
- Divide the mixture evenly among the muffin cups.
- Sprinkle the crushed Cheddar Protein Pretzels evenly over the tops.
- Bake for 10–12 minutes, until lightly golden.
- Let cool for 5 minutes before removing from the pan.
