
Buffy* Hubby Protein Pretzel Cookies

You SERIOUSLY need these Chubby Hubby Protein Cookies…but we call them Buffy* Hubby since they're high protein, high fiber, and low sugar thanks to our Sea Salt Protein Pretzels!

Ingredients (Makes 10 Cookies)
- Cookies:
- 1 1/4 cups of all-purpose flour (or low carb)
- 1/3 cup of keto vanilla cake mix
- 1 pack of sugar-free vanilla pudding mix
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1/4 cup of brown granulated monk fruit
- 1/2 cup of granulated monk fruit
- 1 tbsp of vanilla extract
- 2/3 cup of crunchy peanut butter
- 2 whole eggs
- 2 tbsp of unsweetened almond milk
- Mix-Ins
- 1/2 bag of Sea Salt Crisp Power Protein Pretzels (crushed)
- 1/4 cup of sugar-free chocolate chips
- 1/3 cup of chopped sugar-free caramels
- 1/4 cup of crushed peanuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, keto cake mix, vanilla pudding mix, baking soda, baking powder, and monk fruit sweeteners.
- Mix in the peanut butter, eggs, vanilla extract, and almond milk until smooth.
- Fold in the crushed Sea Salt Crisp Power Protein Pretzels, chocolate chips, caramels, and peanuts.
- Shape the dough into 10 cookies and place them on a parchment-lined baking sheet.
- Bake for 11-12 minutes until the edges turn slightly golden and cookies appear chewy inside.
- Allow to cool slightly before enjoying this nutritious treat.
